Quorn Makes Amazing Taco-Bab
Try a delicious Mexican twist on a kebab in this Taco-Bab recipe made with Quorn Makes Amazing Peri Peri Strips. Quorn strips are seasoned with a traditional South African spice blend, wrapped up in a soft Middle Eastern-style flatbread and slathered in a homemade vegan peri peri mayo, Mexican salsa, guacamole and pink slaw.

Made with Quorn Makes Amazing Peri Peri Strips
Ingredients
- 1 pack (175g) Quorn Makes Amazing Vegan Peri Peri Strips
- 2 flatbreads
- 2 tsp vegetable oil
- Mango Pico de Gallo Salsa
- 1 fresh ripe mango
- Juice of 2 limes
- 2 tomatoes
- 1 white onion
- Handful of coriander
- 2-3 Scotch Bonnet chillis
- 6-10 pickled jalapeño slices
- 1 tbsp jalapeño brine juice
- 1/2 tsp smoked paprika
- Salt and freshly ground pepper to taste
- Guacamole
- 2 ripe avocados, peeled, stones and mash
- Juice of 1 lime
- Tsp garlic powder
- Handful of coriander, finely chopped
- Salt and freshly ground pepper to taste
- Peri Peri Mayo
- 5 tbsp vegan mayonnaise
- 2 tbsp peri peri seasoning
- Juice of 1 lime
- Small handful of coriander, finely chopped
- 1 tsp liquid smoke
- Salt and freshly ground pepper to taste
- Pink Pickled Onion & Cabbage Slaw
- 1 red onion
- 1/4 small red cabbage
- 150ml white wine or cider vinegar
Method
Mango Pico de Gallo Salsa
- Chop all ingredients into small cubes and mix well.
Guacamole
- Combine all ingredients and mix well.
Peri Peri Mayo
- Combine all ingredients and mix well.
Pink Pickled Onion & Cabbage Slaw
- Shred the cabbage and onion into thin strips around 2 inches long each
- Transfer into a lidded jar and top with the vinegar. Turn the jar a few times to cover all the slaw and leave until it turns pink
Taco-Bab
- Add 1 tsp of vegetable oil to a heavy-bottomed frying pan and set over a medium heat.
- Lay flatbreads in the pan and allow to cook for 2-3 minutes, turning halfway through cooking.
- Meanwhile, in a separate pan, heat a tsp of vegetable oil and add the Quorn Peri Peri Strips. Cook for 3-4 minutes to heat through until piping hot.
- Layer up with salsas and sauces and enjoy!
